Chattanooga Whiskey's Bottled in Bond: Fall 2022 Vintage is a blend of four Tennessee High Malt bourbon mash bills, including two new recipes pulled from different corners of their archives: Barrel 54 and Barrel 177.
The Fall 2022 Vintage is hitting shelves at their Experimental Distillery on Thursday, September 3, for $52.99, with bottles making their way to stores in the weeks ahead.
Barrel 54 was developed at Chattanooga Whiskey's Experimental Distillery back in late 2015 and it remains one of the most unique mash bills in their library.
It's a very unconventional recipe — where most bourbon mash bills are rounded out with rye or wheat, Barrel 54 uses a combination of malted spelt and a huskless malted oat, which naturally add a fuller texture and weight to the palate.
The other new mash bill, Barrel 177, does the opposite, using its malted grains for aroma and flavor rather than texture. Melanoidin malt is uniquely kilned to brown from the inside, developing the same compounds that give a graham cracker its color and flavor. Meanwhile, Carafa — a German chocolate malt — is drum roasted and pulled from the roaster at the point it tastes like dark chocolate.
Fall vintages have to earn the name, and this one is appropriately built like a s'more, with melanoidin malt as the graham cracker, German Carafa malt as the chocolate, and Barrel 54 as the toasted marshmallow, giving you that same textural contrast straight off the fire.
